Featuring small plates and a setting for sharing, Pigeonhole focuses on evening service, open 4pm until ‘late’ – perfect for satiating nighttime hunger or thirst.
Their wine list nods to industry trends that are finally making a push in YYC. More than 80% of their wine list features natural wine, made without chemicals using the most minimal technological intervention in the winemaking process. Pigeonhole also offers a small Corvin menu, using technology that allows you to access, pour and enjoy wine from a bottle without pulling the cork. Here you can enjoy a single glass of 2011 Leflaive Puligny-Montrachet from Burgundy – a bottle that boasts a $245 price tag.
