Pigeonhole’s (306 17th Ave S.W.) unique and European design underscores the quaint interior (brown leather chairs and wallpaper), the serving plates (an antique treasure hunt) and their re-imagined food and wine menu. Featuring small plates and a setting for sharing, Pigeonhole focuses on evening service, open 4pm until ‘late’ – perfect for satiating nighttime hunger or thirst.
Their wine list nods to industry trends that are finally making a push in YYC. More than 80% of their wine list features natural wine, made without chemicals using the most minimal technological intervention in the winemaking process. Pigeonhole also offers a small Corvin menu, using technology that allows you to access, pour and enjoy wine from a bottle without pulling the cork. Here you can enjoy a single glass of 2011 Leflaive Puligny-Montrachet from Burgundy – a bottle that boasts a $245 price tag.
Perhaps here you can try your first glass of Orange wine – a white wine produced more like red. Savoury and tannic, Pigeonhole’s cellar hosts Agricola Menti Monte Del Cuca, an orange wine that pairs beautifully with their PH Satay style duck leg, with peanuts and cilantro or the chicken liver mousse with plum and sourdough.
